Peanut Butter Banana Oatmeal Bars (No Sugar Added)
Description
These are quite nice! They're a bit bland for myself with no sugar added but I would actually eat them like this too, with just the sweetness from the banana. My toddler likes them.
Ingredients
2 1/2 cups rolled oats (quick cooking)
1/4 cup coconut oil, melted
1 large banana
1/2 cup unsweetened apple sauce
1/4 cup creamy peanut butter
1/2 tsp vanilla extract
2 large egg
1 cup whole milk
1 tsp cinnamon
1/2 tsp. baking powder
1 Tbsp ground flax optional
1 Tbsp hemp hearts optional
Directions
Preheat oven to 350°.
Add all ingredients to stand mixer (or use a bowl and hand mixer) and mix well to combine
Grease or line an 8x8 pan with parchment paper. Add the batter to the pan and bake at 350° for ~40 minutes, or until the center is set.
Slice and store refrigerated for up to 5 days or frozen in an airtight container for 2 months.
