Spinach Muffins

Description

Low sugar muffin (sweetened with banana and small amount of maple syrup). Tasty snack for toddler or kids

Spinach Muffins
Ingredients
  • 2 bananas (approx 250g skin on, 160g peeled)
  • 100g fresh or frozen spinach
  • ½ cup milk
  • 2 Tbsp maple syrup
  • 1 egg
  • 3 Tbsp oil or melted butter
  • 1 cup rolled oats
  • 1 cup flour
  • 3 tsp baking powder
  • 1 Tbsp flax seeds (optional)
  • 1 Tbsp hemp hearts (optional)
Directions
  1. In a bowl whisk the dry ingredients, (oats, flour, baking powder)
  2. In a blender blend the remaining ingredients (banana, spinach, oil, maple syrup, egg and milk into a green smoothie
  3. Pour the smoothie mix into the dry ingredients
  4. Mix with a wooden spoon
  5. Fill a greased muffin tray with the mix. From the mix, you get 9-10 large muffins or 24 mini muffins
  6. Bake at 350F. Regular muffins bake for 20-25 minutes, mini muffins bake for 15-20 minutes
  7. Cool and serve
  8. Store in an airtight container for 2-3 days or freeze
