Delicious, slightly spicy noodles. Easy to add in more zucchini or add chicken or some other meat. Healthier version (6-8 large zucchini, 1 large bag broccoli pre-roasted, 1 tbs sesame oil only)
Ingredients
2 boxes spaghetti
6 shredded zucchini (could easily double) cooked in 2 Tbs butter and salted
3/4 cup peanut butter
1/2 cup sesame oil
1/2 cup soy sauce
1/4 cup maple syrup
3 tbs sriracha
Directions
Cook shredded zucchini in butter and salt until most liquid is gone. Strain and set aside
Cook spaghetti according to package
Mix all sauce ingredients together and pour over spaghetti and zucchini mixed together.
