Chicken and Rice Casserole

Description

Nice and savory casserole, can easily modify for different meats or veggies.

Chicken and Rice Casserole
Ingredients
  • 4 chicken breasts, chopped
  • 1 cup chicken stock
  • 2 cups instant white rice
  • 1 10.5oz can cream of chicken soup
  • 1 10.5oz can cream of celery soup
  • 1 10.5 oz can cream of mushroom soup
  • 1 tbs salt
  • ground black pepper
  • 4 tbs cup butter sliced into pats
  • option1:
  • 2 frozen bags carrots/peas (cooked according to directions)
  • 2 bags sliced mushrooms
  • rotisserie chicken seasoning
  • option2:
  • 1 large bag broccoli (cooked according to directions then roughly chopped up)
  • parmesan cheese to sprinkle over top
Directions
  1. Mix all ingredients except butter and cheese together and put in greased 9x13 pan
  2. Put butter (and optional cheese) on top
  3. Bake in oven at 400F for 60-90min (depending on liquid level)
