Panzanella Salad
Ingredients
  • 3 tbs olive oil
  • 3 tbs red wine vinegar
  • 1 lb chicken breast (marinated and cooked in 2/3 cup italian dressing)
  • 8 oz bread (kalamata olive is good)
  • 5 cups cherry tomatoes
  • 2 cups baby spinach
  • ½ cup fresh mozzarella
  • 2 oz peppers, red, flame roasted
  • ¼ cup basil, fresh, chopped
  • ¼ tsp salt
Directions
  1. Toss all ingredients together
