Roasted Carrots

Ingredients
- 12 Carrots
- 1 handful fresh thyme
- ¼ cup olive oil
- Salt and pepper
Directions
- Preheat oven to 400 degrees
- Cut carrots in half down the middle, coat in olive oil and sprinkle with thyme and generous amounts of salt and pepper
- Cook for ~40 minutes till soft and wrinkly
