Roasted Carrots
Ingredients
  • 12 Carrots
  • 1 handful fresh thyme
  • ¼ cup olive oil
  • Salt and pepper
Directions
  1. Preheat oven to 400 degrees
  2. Cut carrots in half down the middle, coat in olive oil and sprinkle with thyme and generous amounts of salt and pepper
  3. Cook for ~40 minutes till soft and wrinkly
