Coconut Sweet Potato Soup
Ingredients
  • 1 1/2 pounds orange-fleshed sweet potatoes
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 (2 inch) piece fresh ginger root, thinly sliced
  • 1 tablespoon red curry paste
  • 1 (15 ounce) can unsweetened coconut milk
  • 3 cups chicken broth
  • 3 1/2 tablespoons lemon juice
  • 1 teaspoon sea salt
  • 1 tablespoon toasted sesame oil
  • 1/2 cup chopped fresh cilantro
  • Alternative to curry paste and fresh ginger: 1 tsp chili powder, 1 tsp cumin, 1 tsp ginger, and 1 tbs curry powder
Directions
  1. Boil chicken broth, peel sweet potatoes, cut into chunks, and add to broth. Add chopped onion. Add curry paste and fresh ginger (or alternative recipe)
  2. Once potatoes are cooked, puree in blender with lemon juice or add lemon juice to pot and use immersion blender.
  3. Add coconut milk, chopped cilantro, and sesame oil
  4. Garnish with sour cream
