You can easily add other veggies to this like shredded zucchini, chopped spinach, chopped peppers, etc. You can make with lean ground beef, or ground chicken instead.
Ingredients
1 lb ground turkey
1 grated carrot
1 small onion, minced
1/2 cup italian or plain breadcrumbs
1 clove garlic, minced
1 egg
2 tbs milk
1 tsp salt
1/2 cup grated parmesan
dried parsley
Directions
Preheat oven to 350 F
Saute onion for a few minutes until softened, add garlic and cook 30 more seconds
Mix together ground turkey with all other ingredients
Use ~2Tbs of mixture to form meatball on lined baking sheet/dish or put into mini cupcake tin
Bake for 15-20 min until internal temp reads over 165 F
