Mexican Wedding Cookies
Ingredients
  • 1 cup (2 sticks) butter, softened
  • ½ cup confectioners’ sugar
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 2 cups finely chopped pecans (you can substitute almonds or walnuts)
  • 1 ½ to 2 cups of powdered sugar (for rolling)
Directions
  1. Preheat your oven to 350°F. Cream together the butter and confectioner’s sugar. Add vanilla and food color and mix well.
  2. Sift together flour and salt then toss with the nuts. Add one cupful at a time to the wet ingredients until well incorporated.
  3. Roll the cookies into one-inch balls. Bake on ungreased cookie sheets for 15 minutes until slightly brown on the bottom.
  4. While hot, roll in powdered sugar, then remove to a cookie rack to cool. After they are cool, roll them in powdered sugar once more to evenly coat. Makes about 40-50 cookies.
