Quinoa Balls

Quinoa Balls
Ingredients
  • 2 tbsp oil
  • 2 onions finely chopped
  • 4 garlic cloves finely chopped
  • 2 tsp finely chopped ginger
  • 4 tbsp white wine vinegar
  • 2 tbsp soy sauce
  • 4 tbsp tomato paste
  • 1 cup pineapple juice + 1 cup chopped pineapple (or 1 16oz can crushed pineapple for both)
  • 1/2 cup water
  • 1 cup quinoa (rinsed)
  • 2 eggs
Directions
  1. Pre heat oven to 350F
  2. Heat oil in pan over medium-high heat. Reduce heat and gently fry the onion until softened (approx. 5 mins). Add the garlic and ginger and fry for a further min. To the onions and garlic, add the vinegar, soy sauce, tomato paste, pineapple juice/pineapple, water and quinoa then stir.
  3. Bring to the boil, reduce the heat to low, cover and allow to simmer for 15 mins.
  4. Turn the heat off and leave the quinoa to sit covered for a further 5 mins.
  5. Allow to cool and then stir in the beaten eggs.
  6. If the mixture is still too watery, add baby oatmeal or flour to thicken
  7. Form approx. 30 heaped tablespoon sized balls and place on a silicon mat / lined baking tray.
  8. Cook in the oven for 25 mins or until golden.
