Maple Cornmeal Muffins
Ingredients
  • 1 cup cornmeal
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 2 tablespoons maple syrup
  • ¼ cup canola oil or melted and slightly cooled butter
  • 1 teaspoons salt
  • 1/2 cup corn and/or peas
Directions
  1. Preheat the oven to 400 F and grease a mini muffin tin.
  2. Stir together all ingredients in a medium bowl.
  3. Portion about 1 ½ tablespoons batter into each prepared cup and bake for about 12-14 minutes or until the edges are lightly golden brown and a cake tester inserted into the center comes out cleanly.
  4. Transfer to a wire rack to cool. Serve warm or at room temperature.
