Using baking soda in a parboil helps get very crispy potatoes. I do the first boiling and mixing step for a whole 5lb bag of small potatoes from Costco at once and then keep in the fridge and air fry in batches as desired.
Ingredients
2qts water
2tbs salt
1 tsp baking soda
4lbs potatoes (can use whole 5lb bag from Costco, potatoes cut into quarters or halves)
4 tbs butter
seasoning
Directions
Bring water to a boil
Add salt, baking soda, and potatoes
Bring back to boil and cook about 10min until knife tender
Drain
Stir vigorously with oil and seasoning to roughen edges (I used 4tbsp butter with lots of seasoning mix and beat briefly with stand mixer)
