Roquefort Pear Salad
Ingredients
  • 1 bag Romaine lettuce mix
  • 2-3 pears, cored and chopped (you can peel them first if you want, but I don’t bother)
  • 5 oz Roquefort or blue cheese, crumbled
  • 1 avocado, diced
  • ½ cup sliced green onions
  • 1/2 cup walnuts or sugared pecans
  • Dressing:
  • 1/3 cup olive oil
  • 3 tbs red wine vinegar
  • 1 ½ tsp mustard
  • 1 ½ tsp white sugar
  • 1 clove garlic, minced
  • ½ tsp salt
  • Black pepper to taste
Directions
  1. Mix dressing ingredients together, stir vigorously
  2. Toss all components together and drizzle with dressing
