Crispy Wings

Description

For 10lb bag of Costco wings I used 8 tbsp baking powder, 3 tbsp kosher salt, and 2 tbsp white pepper.

Crispy Wings
Ingredients
  • 3lbs chicken wings
  • 2 tsp kosher salt
  • 1 1/2 tsp white pepper
  • 2 tbsp baking powder
  • 1/2 tbsp neutral oil
Directions
  1. Pat chicken wings completely dry and add the wings to a large bowl. Add the neutral oil to the wings. In a small bowl, mix kosher salt, ground white pepper and baking powder until combined. Pour half of the seasoning over the wings, mix, then add the rest of the seasonings to ensure all wings are evenly coated.
  2. Air Fryer:
  3. In a single layer, place the chicken wings in the air fryer ensuring they do not touch each other, and air fry for 10 minutes at 400F.
  4. Flip the chicken wings and air fry again for 5-11 minutes at 400F (depending on the size of the wings – I used 10min) or until the skin is golden brown and crispy.
  5. Serve with your favorite wing sauce or eat dry and enjoy.
  6. Bake:
  7. Take a large baking sheet and line it with foil. Place a wire rack on top of the baking sheet and lay the wings on the wire rack with space between each wing so they are not touching each other.
  8. Bake at 450F for 30 minutes (use convection if possible). Flip and bake for another 20-25 minutes until the skin is crispy.
  9. Toss in your favorite sauce or eat plain and enjoy.
