Meatloaf

Description

For a healthier version I make the following substitutes and it's still quite tasty! Use 2/3 turkey and 1/3 beef (e.g. 1 1/3 lb turkey and 2/3 lb beef). Use No Sugar Added ketchup. Cut brown sugar in topping down to 1Tbsp from 2.5 Tbsp

Meatloaf

Ingredients
  • 2 lbs ground beef (or 1lb ground turkey + 1lb ground beef)
  • 1 large onion, chopped and browned in pan
  • 2 eggs
  • 3 cloves minced garlic
  • 3 Tbs ketchup
  • 3 Tbs fresh parsley or 2 tsp dry parsley
  • 3/4 cup panko or regular breadcrumbs
  • 1/3 cup milk
  • 2 tsp salt
  • thyme
  • oregano
  • ground black pepper
  • 1 tsp paprika
  • sauce:
  • 3/4 cup ketchup
  • 1.5 tsp white vinegar
  • 2.5 Tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp pepper
  • 1/4 tsp salt
Directions
  1. Mix all loaf ingredients together and put in greased loaf pan.
  2. Cook at 375 for 40 min
  3. Add sauce to top and bake additional 20 min
