Egg Cups

Description

I make a batch of 24 of these at a time and freeze them all. I pull 2 more out every 2 days to thaw and she eats one for every breakfast. She likes the bit of saltiness from the ham and cheese and it gets her some good protein and vegetables in the morning. The recipe is for a batch of 12.

Egg Cups

Ingredients
  • 12 eggs
  • 1 bag of frozen broccoli rice (or cook equivalent broccoli and then shred or dice up)
  • 1 thick slice of ham (or crumbled sausage, or shredded chicken, or crumbled bacon), cut into small pieces
  • shredded cheese (we use Mexican blend, cheddar, whatever)
Directions
  1. Spray muffin tin with pam or lightly oil
  2. Fill each slot about 1/3-1/2 full of broccoli
  3. Add some pieces of meat
  4. Sprinkle a small handful of cheese on top
  5. Beat 12 eggs together and then pour into the muffin tin, over the other ingredients
  6. Bake at 350 for ~20-30 min until eggs are cooked through
